Artichoke Dip

1 tablespoon Full Circle Extra Virgin Olive oil
1/4 cup minced shallot
1 large clove garlic, minced
1 (10 oz.) package Full Circle Organic Frozen Chopped
Spinach, thawed
1 can (14 oz.) artichoke hearts, drained, chopped
1 (8 oz.) package cream cheese, softened
2 tablespoons mayonnaise
1/2 teaspoon hot red pepper sauce
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Pita chips


Preheat oven to 375 degrees; spray a 5 to 6-cup casserole dish with Full Circle Olive Oil Cooking Spray. Heat olive oil in small skillet over medium heat; add shallot and sauté until soft, about 3 minutes. Add garlic and sauté 1 minute longer. Drain spinach well, squeezing through a strainer until almost dry. Combine spinach, artichoke hearts, shallot and garlic.

In large bowl, combine softened cream cheese, mayonnaise and hot sauce, stir in mozzarella and Parmesan cheeses. Fold spinach mixture into cheese mixture and spoon into prepared casserole dish; bake 18 to 20 minutes or until bubbly. Serve hot with pita chips.
